And while I’m certainly tempted to try my hand at those luscious vanilla pastry creams, sometimes you just can’t beat the classic, nostalgic flavors of a tried-and-true eclair cake. Plus, with warmer weather on the horizon, the last thing I want to do is spend hours in the kitchen baking.

That’s why I’m so excited to share my mom’s easy, no-bake Chocolate Eclair Cake recipe with all of you. It’s the perfect summertime dessert – cool, creamy, and downright delicious. And the best part? You only need 5 simple ingredients to whip it up.

Ingredient Spotlight

As for the other ingredients, you’ll need graham crackers (or a gluten-free alternative like these Simple Mills cinnamon sweet thins), heavy cream, chocolate chips, and a splash of milk. That’s it! With just a few minutes of prep work, you’ll have a show-stopping dessert that’ll have your family and friends coming back for seconds (or thirds).

Assembly Line

Okay, let’s dive into the step-by-step process. First, you’ll want to whip that heavy cream into firm peaks and stash it in the fridge while you tackle the rest of the recipe. Next, gently warm some more cream on the stove or in the microwave until you see those little bubbles forming around the edges.

Pour that warm cream over your chocolate chips and let it sit for a minute, then stir gently to create a silky smooth ganache. While that’s cooling, it’s time to start layering.
