It all began when I received an invitation to join the New York City Wine and Food Festival for a dinner curated by Spice Islands®. As an avid home cook with a deep appreciation for the power of spices, I eagerly accepted the opportunity to indulge in a sensory adventure.

Upon arriving at the event, I was greeted by a beautifully set dining room that exuded a warm, rustic ambiance – the perfect backdrop for the culinary magic that was about to unfold. The dinner menu, crafted by renowned chefs Pierre Thiam and Carla Hall, promised to be a true feast for the senses.

Curry Chicken Spinach Salad: The Recipe


  • 1 lb boneless, skinless chicken breasts, cubed
  • 2 tbsp Spice Islands® Curry Powder
  • 1 tsp Spice Islands® Ground Ginger
  • 1 tsp Spice Islands® Turmeric
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 2 tomatoes, diced
  • 1 cup coconut milk
  • 2 tbsp tomato paste
  • 8 oz fresh spinach leaves
  • 2 tbsp fresh cilantro, chopped
  • Salt and pepper to taste


  1. In a large skillet, sauté the onions in a bit of oil until translucent, about 3-4 minutes.
  2. Add the garlic and cook for an additional minute, until fragrant.
  3. Stir in the Spice Islands® Curry Powder, Ginger, and Turmeric. Cook for 1 minute, allowing the spices to bloom.
