Curried Carrot and Ginger Soup with Cashews

A Flavor Explosion in Every Spoonful

It’s been a while since I’ve made soup, and I’ll admit – I’ve been in a bit of a dry spell lately. Maybe it’s the hot summer weather, or maybe I’ve just been feeling a tad lazy. Either way, I haven’t whipped up a fresh, homemade soup in what feels like ages.

That is, until I had a bite of the most incredible curried carrot soup at one of my favorite restaurants. The moment that vibrant, subtly spiced broth hit my tongue, I knew I had to recreate it at home. I rushed to the grocery store, gathering up all the necessary ingredients – carrots, onions, garlic, ginger, cashews, and more. I was determined to capture that same bold, comforting flavor in my own kitchen.

Curry Crisis and a Citrus Saving Grace

Unfortunately, when I got home and started cooking, I realized I was fresh out of curry powder. What a disaster! I had been so certain I had some leftover from past Indian dishes, but alas, my spice cabinet had betrayed me.

Luckily, I had a backup plan – or at least the beginnings of one. I noticed a few oranges sitting pretty in my fruit basket, and I had a hunch their bright, zesty flavor could work wonders in a carrot soup. So, I decided to pivot my recipe and let the oranges take the lead, rather than the curry.

Long story short, that decision ended up being a total game-changer. The oranges lent a lovely freshness that perfectly complemented the earthy sweetness of the carrots. Combined with the warm ginger and creamy cashews, this soup transformed into something truly special – a flavor explosion in every single spoonful.

A Nutritional Powerhouse

But beyond the incredible taste, this soup is also a total nutritional powerhouse. Just look at that vibrant orange hue – it’s bursting with antioxidants from the carrots. And the addition of ginger provides a wealth of anti-inflammatory benefits. Not to mention, the raw cashews lend a luxuriously creamy texture while boosting the protein content.

Needless to say, I was absolutely smitten with the end result. In fact, I enjoyed a big bowl of this soup as part of my lunch today, and I can already tell you that it’s going to be a new regular in my cooking rotation. I’m already dreaming up ways to experiment with a curried version, too. Maybe next time I’ll pick up an extra jar of curry powder, just to be safe!

Curried Carrot and Ginger Soup with Cashews

Serves 4-5

Ingredients:

  • 2 lbs carrots, peeled and chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp grated fresh ginger
  • 4 cups vegetable broth
  • 1 cup raw cashews
  • Juice of 2 oranges
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground turmeric
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste
  • Chopped cilantro, for garnish (optional)

Instructions:

  1. In a large pot, sauté the onions in a bit of olive oil over medium heat until soft and translucent, about 5-7 minutes.
  2. Add the garlic and ginger and cook for 1 minute more, until fragrant.
  3. Stir in the carrots, cumin, coriander, turmeric, and cayenne. Cook for 10 minutes, stirring occasionally, until the carrots are tender.
  4. Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and simmer for 15-20 minutes, until the carrots are very soft.
  5. Remove from heat and use an immersion blender to purée the soup until smooth and creamy. Alternatively, you can carefully transfer the soup to a standard blender and blend in batches.
  6. Stir in the orange juice and season with salt and pepper to taste.
  7. Serve the soup warm, garnished with chopped cashews and fresh cilantro if desired.

This soup is equally delicious enjoyed hot or chilled. Feel free to experiment with different garnishes like toasted coconut flakes, crushed red pepper flakes, or a drizzle of sriracha. No matter how you serve it, I guarantee it will transport your taste buds to flavor heaven.
