  • 3 carrots, diced
  • 3 celery stalks, diced
  • 2 cups frozen peas
  • 1 cup frozen corn
  • 1 cup pearl barley
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Place the whole chicken in a large stockpot and cover with the 8 cups of water. Add the bay leaves and peppercorns. Bring to a boil, then reduce heat and simmer for 1 hour.
  2. Remove the chicken from the broth and set aside to cool. Strain the broth through a fine-mesh sieve, discarding the solids.
  3. In the same pot, heat the olive oil over medium heat. Add the onion, carrots, and celery. Sauté for 5-7 minutes until softened.
  4. Once the chicken is cool enough to handle, remove the meat from the bones and shred or chop it into bite-sized pieces.
  5. Add the shredded chicken, pearl barley, peas, and corn to the pot with the sautéed vegetables. Pour in the strained chicken broth and season with salt and pepper to taste.
  6. Bring the soup to a boil, then reduce heat and simmer for 45-60 minutes, until the barley is tender.
  7. Serve hot, garnished with fresh parsley.
