Noodle soup comes in many forms and they are all such a joy and comfort to eat. I don’t know why but the experience of the flavorful hot, almost scorching, broth passing from the lips and down the throat evokes sensations that are relaxing, stimulating and exciting all at the same time. Then, as you lift the noodles to your mouth and enjoy them with that combined motion of sipping, sucking and chewing, the delicious experience multiplies even more.

In Asia alone, the varieties of noodle soup are so numerous that one can spend a lifetime eating noodle soup everyday and still not be able to try them all. I love the Vietnamese pho, the Japanese ramen and, most of all, I like the Chinese noodle soup served with wontons — but only next to the kind served with chunks of gelatinous melt-in-the-mouth beef ligaments although this rather “sinful” noodle soup is not something I can enjoy every weekend or even every month.

Nice post! It’s also my comfort food. Makes me want to sneak out of the office and have some steaming hot noodle soup… yum!
i agree with what you said about noodle soup. it’s a comfort food par excellence! speaking of noodle soup, i cooked beef mami (pinoy style)last night and my son wouldn’t eat it at first because he finds the name beef mami bizarre( in french mami means grandma)! he was telling me i dont want to eat beef grandma! so i had to explain that mami in tagalog is noodle soup. and after few minutes of convincing, he tried it and few minutes later, he was asking for a second serving!
Wow, that must have been a superlative pot of beef mami!
I do this also with leftover roasted chicken, making it into a good broth. Then adding noodles.
I should try Causeway Timog after 9pm. Thank you for advise.
