Re removing the cheesecakes from the pan. Aissa’s right about the paper liners. It’s either liners or using a pan with a removable bottom.

Tina, the prevent the cake from sinking at the center, leave to cool in the oven until they reach room temp. Sudden change in temp really makes the centers sink.
Re bubbles: If the fan of your convection oven is on top (like in turbo broilers), bubbles are normal.

Hi Tina! Actually, hindi ko alam kung paano malaman if over beaten yung batter. What i did kasi after using the electric mixer e hinalo ko again yung batter with a spatula, to pop those “unexpected” bubbles. You did not use cupcake liners ba to prevent the cheesecakes from sticking? Better if you use those [...]

Hi Aissa, I used a convection oven so the time was set already..18-20 minutes I think. I did what the procedure says in the recipe. Made some adjustments with the ingredients though..(sinubukan ko muna ng kaunti para hindi nakakaiyak kung nagkamali). Beat the batter over slow speed…Hmmm..How would you know ba Aissa if the cheesecake [...]

I also tried joy of baking’s Mini cheesecakes and mine did not sink. As soon na nag set na yung side ng cheesecake, i turned off the oven and slightly opened it. As for the bubbles, baka na over beat yung cheesecake batter. You can check the pics of my mini cheesecakes on the link [...]

Like one of Ms Connie’s fan, I cooked this recipe using a conventional oven since I don’t have a steamer.I used a non-stick muffin pan loosely covered with aluminum foil so there’s enough space when the puto rises.
